Gluten Free "Irish" Stew

Introduction

This is an adaption of my favourite mum-stew, which I can't eat anymore! It is healthy, smells great and tastes delicious! This is an adaption of my favourite mum-stew, which I can't eat anymore! It is healthy, smells great and tastes delicious!
Number of Servings: 8

Ingredients

    1/4 Butternut Pumpkin (Squash)
    1 med brown potato
    1 med sweet potato
    1 med onion
    1L Beef stock (bouillon) - salt reduced
    1/4 cup of Amaranth grain*
    3/4-1 cup Buckwheat Kernels

    *Amaranth is an acquired texture - give it a go, but if you don't like it the recipe is fine without it.

Directions

Peel or skin the vegies as required or preferred. Cut vegies and steak into bite-size chunks (1-2cm). Put into stew pot with 1L of beef stock/bouillon. Stir in Amaranth and Buckwheat.

Cook over low heat for a couple of hours, stirring occasionally. When vegies and meat are soft to eat, the stew is done! If you prefer thicker stew, you can add a little gravy a few minutes before serving.

This recipe makes about 8 small bowl servings!
