Carrot/Blueberry/Flax Muffins

Ingredients

1 cup multi-grain hot cereal, dry mix
1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup ground flax seed
1 tbsp. baking powder
1/2 teas. baking soda
1/2 teas. salt
1/3 cup sugar
1 cup shredded carrots
1 cup blueberries
1/2 cup chopped walnuts or pecans
2 eggs
1/2 cup skim milk
1/4 cup vegetable oil
1 teas. vanilla
Directions
Makes 12 muffins
Preheat oven to 400. Line 12 muffin cups with paper liners or grease muffin tins. Stir grated carrots, nuts and the blueberries with dry ingredients until they are coated. Add eggs, milk, oil, and vanilla and mix until blended. Spoon into muffin cups. Bake 20 minutes or until browned.
