Introduction

This yummy, filling casserole is great for a busy day--you can put it together in the morning, and then just bake it later. This yummy, filling casserole is great for a busy day--you can put it together in the morning, and then just bake it later.
Number of Servings: 15

Ingredients

    1 pound lean ground beef
    1 clove garlic, minced
    1 onion, diced
    1/2 ts. salt
    1/4 ts. pepper
    1 10 ounce can enchilada sauce
    1 8 ounce can tomato sauce
    2 15 ounce cans chili beans
    1 17 ounce can corn, undrained
    1 4 1/4 ounce can chopped olives (optional)
    15 corn tortillas, torn into large pieces
    1/2 cup finely shredded cheddar cheese

Directions

Brown beef, garlic and onion. Drain off fat. Season with salt and pepper. Add remaining ingredients, except tortillas and cheese. Place 1 cup meat mixture in the bottom of a large casserole dish. Add a layer of tortillas. repleat layers until meat mixture and tortillas are gone, ending with meat mixture. Cover and bake in 350 degree oven for 30 minutes. Sprinkle with cheese and let stand 10 minutes before serving. Serve with light sour cream and lettuce if desired. Makes 15 servings.
