Stuffed Jalapeno Peppers

Introduction

These are cold picked jalapeno peppers stuffed with cheddar cheese, onion, and mayonnaise. We order them at "Buster's BBQ" and came up with what we thought was the recipe. I used one whole (or 2 halves) as the serving size. Who could eat just one? These are cold picked jalapeno peppers stuffed with cheddar cheese, onion, and mayonnaise. Ingredients

    2 Pickled Jalapeno Peppers, sliced in 2, membrane and seeds removed
    1 1/2 Tbs Reduced Fat Mayonnaise
    2 Tbs finely diced onion (more or less if you'd like)
    1 oz finely shredded then chopped cheddar cheese

Directions

Get the cheese as small as you can then mix in the onion and the mayonnaise. It should be very stiff, not thin. Slice the peppers in half lengthwise and place the cheese filling inside each pepper. You almost have to use your hands to mold the filling. These are a great little appetizer and not too bad as far as fat and calories.
