Lemon Blueberry Pancakes

Introduction

One of my very favorite recipes. Not the most healthy, but it doesn't do so terrible. If you cut out the sugar and decrease the oil to only 2 Tbsp. then you decrease the calories to 124. Number of Servings: 12

Ingredients

    1 egg
    2 egg whites
    2 cup flour
    1 1/2 cups milk
    2 tablespoon sugar
    1/4 c. canola oil
    2 tablespoon baking powder
    1 teaspoon salt
    4 teaspoons finely grated lemon peel
    2 teaspoon lemon juice
    1 cup fresh blueberries, or use frozen thawed blueberries

Directions

Beat egg until frothy; beat in remaining ingredients except blueberries, beating just until smooth. Gently stir in blueberries. Grease a heated griddle. For each pancake, pour about 3 tablespoons of batter from a large spoon or from pitcher onto the hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown.

Makes approx. 12.
