Spinach with Cranberries & Pine Nuts

Introduction

I made this for on Boy Scout campouts. It became one of the most requested dishes. Parents were astounded that their boys actually ate and liked spinach! It's easy to cook large batches in a dutch oven. I made this for on Boy Scout campouts. It became one of the most requested dishes. Parents were astounded that their boys actually ate and liked spinach! It's easy to cook large batches in a dutch oven.
Number of Servings: 4

Ingredients

    1 Tbl olive oil
    1 clove garlic, finely chopped
    2 Tbl pine nuts
    2 Tbl dried cranberries
    1 10-oz pkg baby spinach, washed
    1 Tbl cider vinegar
    1/2 tsp sugar

Directions

Heat olive oil in wok or dutch oven. Add garlic and pine nuts and stir until browned, about 1 minute. Add cranberries and stir. Add spinach and stir until wilted. Add vinegar and sugar and stir.

Makes four 1/2-cup servings.

  • Thanks for this great, easy recipe! Took it to a friend's house for potluck dinner and everyone enjoyed it. Can't say that the kids are as thrilled about it as yours, but it will be a nice staple for my husband and me! - 1/5/09
