Ingredients

5 large eggs
1/2 cup ham, small dice
2 scallions
3 mushrooms, finely chopped
1/2 cup shredded cheddar cheese
Directions
Heat oven to 375 degrees. Mix all ingredients together briskly with a whisk. Pour evenly into well-greased 12 cup muffin tin. Bake for 11 minutes. Be careful not to overcook, especially if planning on reheating later. To release, run a knife around the edge of each cup. Let cool completely before refrigerating. Also tasty with tomato, onion, and turkey bacon.
