Rhubarb apple bran muffins

Introduction

These are tasty and packed with the good stuff! Variations can be made with different flavours of yoghurt but my favourite to use is strawberry. These are tasty and packed with the good stuff! Variations can be made with different flavours of yoghurt but my favourite to use is strawberry.
Number of Servings: 12

Ingredients

    1 cup quick rolled oats
    1 cup whole wheat flour
    1 cup wheat bran
    1/2 cup brown sugar, packed
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1 cup rhubarb, chopped
    1 apple, cored and chopped
    2/3 cup low-fat yoghurt (a personal cup)
    1 egg
    1 cup So Nice unsweetened soy milk
    1 Tbsp olive oil
    1 tsp vanilla

Directions

Mix all dry ingredients well then stir in fruit so the fruit pieces are coated in the dry mix.
Mix all wet ingredients well and add to the dry mix. Stir briefly, just to moisten. Spoon into greased muffin tin.
Bake for ~25 minutes at 400F. Let cool in tin for 10 minutes then remove to a cooling rack.
