IntroductionThese are tasty and packed with the good stuff! Variations can be made with different flavours of yoghurt but my favourite to use is strawberry. 1 cup quick rolled oats
1 cup whole wheat flour
1 cup wheat bran
1/2 cup brown sugar, packed
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 cup rhubarb, chopped
1 apple, cored and chopped
2/3 cup low-fat yoghurt (a personal cup)
1 cup So Nice unsweetened soy milk
1 Tbsp olive oil
1 tsp vanilla
Mix all wet ingredients well and add to the dry mix. Stir briefly, just to moisten. Spoon into greased muffin tin.
Bake for ~25 minutes at 400F. Let cool in tin for 10 minutes then remove to a cooling rack.
