Quinoa Pilaf

Ingredients

    .25 c chopped mushrooms
    .25 c chopped celery
    .25 c chopped onions
    .25 c chopped red pepper
    1 c quinoa, dry
    2 c water

Directions

1. Preheat oven to 350. Coat a large 3 qt casserole dish with cooking spray.
2. Briefly saute vegetables in a small fr pan until transparent or soft but not mushy. Place all ingredients in casserole dish and cover. Put in the oven and bake for 45 minutes or until all liquid is absorbed.
