Untraditional Stuffed Manicotti

Introduction

There are so many ways to change up the traditional manicotti dish. Stuff it with whatever you like, Here I used ground turkery, but you could use chicken strips, ground beef, or sausage. Stuff it with whatever you like, Here I used ground turkery, but you could use chicken strips, ground beef, or sausage. Whatever you like.
Number of Servings: 6

Ingredients

    1 Box Manicotti Shells, (12 shells) uncooked
    8 oz. Ground Turkey
    1 can condensed Cream of Chicken Soup
    1 1/2 cups of water
    16 oz Part Skim Ricotta Cheese
    1 3/4 cup Mozzarella Cheese
    2 cup frozen broccoli florets

Directions

Preheat oven at 400ºF.

Cook ground turkey in skillet until cooked thoroughly and crumbled into small pieces. Drain and set aside.

Mix soup, water, ricotta cheese and half of the Mozzarella Cheese in a bowl. Pour a small amount of the mixture to cover bottom of a rectangle baking pan to prevent sticking. Add in ground turkey and broccoli to the remaining mixture. Stuff each shell with mixture and place into baking pan. Any left over mixture pour over shells. Top with remaining Mozzarella cheese. Cover with foil.

Bake about 40-45 minutes until pasta is tender.

Makes 6 servings, 2 stuffed shells each.
