"Lobster" Newburg

Introduction

A lighter version of a classic! A lighter version of a classic!
Number of Servings: 4

Ingredients

    2 egg yolks, beatn
    1/2C. fat free 1/2 and 1/2
    4 Tbsp Country Crock Omega Plus margarine
    2 Tbsp Dry Sherry
    1/2 tsp salt
    pinch cayenne pepper (optional)
    pinch ground nutmeg
    3/4lb Lobster Surimi (I used Lobster Select from Kroger)

Directions

In small bowl, whisk yolks together and 1/2&1/2 until well blended. set aside. melt margarine in saucepan over low heat. stir in egg mixture; add sherry. Cook, stirring constantly until mixture thickens; DO NOT BOIL. remove from heat, season with salt, pepper, and nutmeg. add lobster. return pan to low heat and cook til heated through. serve over toast points.
