Stuffed Peppers

Introduction

Roasted peppers stuffed with a meat, rice, and tomato mixture and topped off with bubbly, melted cheese! This decadent dish is deceiving: it's actually low calorie and low fat! Number of Servings: 4

Ingredients

    4 green bell peppers
    1 lb 93% lean ground turkey
    1 medium onion, diced
    1 cup prepared brown rice
    15 oz canned tomato sauce
    1/2 tsp garlic powder
    1 tsp oregano
    1/2 tsp basil
    4 oz shredded part skim mozzarella

Directions

1. Brown ground beef and onions in skillet over medium high heat. Drain.

2. In large bowl, mix meat and onions, rice, tomato sauce and spices.

3. Using a sharp knife, cut a circle in the top of each pepper and remove it along with the stem and seeds. Fill each pepper with 1/4 of the filling mixture.

4. Arrange peppers in baking dish. Bake at 350 degrees 45-60 minutes, until peppers are soft and filling is bubbly.

5. Sprinkle 1/2 oz of cheese on top of each pepper and bake an additional 2-3 minutes, until cheese is melted.

Addtional add-ins to try: try adding mushrooms to the meat and onions. Instead of Mozzarella, use reduced fat grated Parmesan. To make a vegetarian meal, try boca crumbles instead of ground turkey.

Alternate cooking method: place filled peppers in crock pot and cook on low 4-6 hours, until peppers are soft. Sprinkle with cheese, turn crockpot to "warm" and allow cheese to melt.
