Zesty Avocado Dressing

Introduction

I love this dressing becase it is simple and always fresh. The avocado gives me healthy monounsaturated fat, and the variety of spices and vinegar choices give me a thousand different combinations. Every salad is a new adventure. I love this dressing becase it is simple and always fresh. The avocado gives me healthy monounsaturated fat, and the variety of spices and vinegar choices give me a thousand different combinations. Every salad is a new adventure.

Ingredients

    1/2 avocado
    2 - 3 Tbsp diced onion (I use red)
    1/2 lime
    2 cloves minced garlic
    1 or 2 splashes of your favorite flavored vinegar (I love chili mango from Trader Joe's)
    sea salt & cracked black pepper (to taste)
    cold water (as needed)

Directions

Place the peeled, seeded avocado half in a large salad bowl. Add salt and pepper to taste, and mash the avocado with a fork. When completely mashed, add the minced garlic, diced onion, pepper flakes (or diced serranos or jalapenos) and mix well. Add several splashes of your favorite vinegar to taste (I've yet to find one that doesn't work in this recipe). Mix well, adding water to thin to desired consistency. Once all ingredients are well combined, add fresh washed, mixed salad greens and toss to coat with dressing. Add your favorite salad toppings (it's particularly good with cold kidney beans) and enjoy!!!
