Beef, Beans, and Rice

Number of Servings: 8

Ingredients

    1 cup dried red beans
    1 cup brown ric
    1 quart chicken broth
    3/4 lb ground chuck
    1 large onion
    2 Tbs. garlic powder
    2 Jalapeno peppers

Directions

Rinse and pick beans. Add 4 cups cold water, and soak overnight. Drain and rinse. Add rice and chicken stock, and bring to a boil. Meanwhile, brown beef and onion. Add beef and onions to beans and rice. Return to a boil, reduce heat, and simmer, covered for 30 minutes. Add garlic powder and peppers. Simmer another 30 minutes, and remove from heat.
Makes 8 1 cup servings.
