sweet potato pancakes

Ingredients

    1 1/2 C whole wheat flour
    3 1/2 tsp baking powder
    1/4 tsp nutmeg
    1/4 tsp cinnamon

    1 1/4 c mashed sweet potatos
    2 eggs
    1 1/2 c low fat milk
    1/4 c unsweetened applesauce

Directions

mix all dry ingredients
add wet ingredients
mix well. will be lumpy
scoop onto preheated griddle.
(i made large pancakes and got 11, smaller spoon will yeild more pancakes)

  • These were absolutely delicious...a lot of prep work if you don't have a vegetable shredder...mine ended up more like hashbrowns. But they were definately tasty. Excellent recipe! - 9/28/10

  • I LOVE these! They are so yummy! I have them with a protein shake in the morning for a complete breakfast. I also use applesauce instead of syrup! Next time I am going to ad flaxseed too for more nutrition power! - 3/18/09
