Zucchini & Beans

Introduction

Awesome Vegetarian Meal that meat eaters can enjoy! Awesome Vegetarian Meal that meat eaters can enjoy!
Number of Servings: 6

Ingredients

    1 large onion
    3 Large Bell Peppers (red, green, yellow)
    1 cup of vegetable broth
    3 med zucchini
    1/2 a bag of white beans or 1 can of beans
    1 lb of penne pasta

Directions

slice onion and peppers into 2-3" strips. Saute in broth seasoning until soft. (Make sure the water doesn't all evaporate, but don't add too much. Use only enough water to keep it from sticking). The Zucchini will add water to it as it cooks.

Slice Zucchini into 1/4" slices. Add Zucchini to onions and peppers and steam until the zucchini starts to get soft. Then take the lid off so that the mixture can thicken. When the zucchini is soft, but with a slight bite, add the beans. Sirt and Cook over low heat until it thickens more. Eat as a suce over the pasta.

Also adding a bay leaf to the vegis adds an intersting taste.

  • This dish looked delicious and smelled even better while preparing it, but upon tasting the dish it was apparent that they FORGOT 2 ADD the FLAVOR. I was awful. I had to throw it all away because no one would eat it. I like healthy foods, but this one literally made me gag. Sorry but its no good - 1/22/09
