4 Plums, pitted and roughly chopped
2 cups of unsweetened apple juice
2 tbls honey
1 fresh thyme sprig
1 slice of fresh ginger root (1/4 inch thick)
4 whole peppercorns
1/4 tsp ground cinnamon
dash of allspice
1 1/2 tsp fresh lemon juice
4 tbls light sour cream
1 tbls slivered almonds, toasted
Discard the ginger, thyme, and peppercorns. Transfer the plum mixture to a blender and puree. Stir in the lemon juice. Refrigerate, covered, until chilled (2-4 hours or overnight). Serve in individual bowls, topped wtih the sour cream and sprinkled with almonds.
