Dijon Skillet Chicken

Introduction

A stove top casserole with chicken, potatoes and asparagus. A stove top casserole with chicken, potatoes and asparagus.
Number of Servings: 4

Ingredients

    2 Skinless Boneless Breasts - cut into chunks
    6 Small Potatoes
    1 Bunch Asparagus
    3 Tbls Dijon Mustard
    1 Tbls Extra Virgin Olive Oil
    1 C Chicken Broth
    1 Med. Onion Chopped
    3 Cloves Garlic
    Salt - to taste

Directions

Add Olive Oil to pan and heat, Cut chicken into bite size chunks and add to oil. Peel and Slice Potatoes thin and boil. When chicken is browned, add onion and garlic. Add Asparagus to Potato water about 5 minutes before done. Add Chicken broth and mustard to chicken when onions become translucent. Ladle some broth into a bowl - mix in 1/2 cup of yogurt and add back to pan. Add potato and Asparagus to pan - coat with mustard sauce. Serve and enjoy!
