Kate's Mocha Cheesecake Pudding Parfaits

Introduction

Nobody would ever taste this rich delicious dessert and guess it was fat free AND sugar free! A 1/2 cup serving is lean, healthy and satisfying. A great way to stay on track without feeling deprived! Prepared in individual containers, it's handy to take to work for a healthy snack or dessert for your healthy lunch. Ingredients

    1 pkg Jello fat free, sugar free chocolate fudge pudding
    1 pkg Jello fat free, sugar free cheesecake pudding
    4 c skim milk
    1/2 c chopped walnuts (optional)

Directions

First, line up 8 1/2-cup containers with lids. Next, prepare the chocolate pudding according to package directions, but measure the milk just a tiny bit short. Instead of 2 cups, use about 1 cup and 7 oz.

Measure 1/4 c of pudding into the bottom of each cup.

Wash the bowl thoroughly, or use another bowl.

Measure out the same amount of milk as for the chocolate pudding. Add 1/2 tsp instant coffee. * Not 1/4 oz - it wouldn't let me measure by tsp. Stir the milk and coffee for a few seconds until it starts to dissolve a little. Then add the cheesecake pudding and finish preparing according to package directions.

Measure 1/4 c of the coffee-cheesecake pudding into the cups on top of the chocolate pudding. Then sprinkle a few walnut pieces** on top of each and put the lids on. It's ready to eat now, but it will firm up more after it's been refrigerated for a while.

* You might like your coffee flavor a little stronger or weaker. You can adjust this to taste without changing the nutritional value of the recipe. But don't go too strong or it'll get bitter.

**If you don't like walnuts, feel free to leave them off and lose 47 calories. But walnuts are packed with heart-healthy omega-3 fatty acids, so don't skip them if you like them. They're good for you! Just don't use more than 1/2 cup of them for 8 servings of pudding parfaits.
