Ingredients

    10 cups Spring Medley salad mix
    1/2 medium red onion, diced
    1 fennel bulb, trimmed and thinly sliced
    2 oz. Kalamata olives
    1 can Chickpeas (garbanzo beans)
    1 can Artichoke Hearts, quartered and canned in water
    1 jar fire roasted red peppers, chopped (roughly 1/2 cup)

Directions

1. Drain olives, chickpeas, artichoke hearts and red peppers. Prepare other ingrediants as indicated in list.

2. Combine all ingrediants in a large salad bowl and toss well.
