Super low-cal Asian Soup

Introduction

Seriously low calorie but generously portioned vegetarian soup. Carnivores can use chicken in place of seitan and chicken broth instead of veggie broth. Number of Servings: 4

Ingredients

    4 oz. seitan (or chicken, sliced very thin)
    1 tbsp. soy sauce
    1 tsp. canola oil
    2 cloves garlic, minced
    2 cups cabbage, chopped
    2 cups cauliflower, chopped
    1 cup carrots, sliced thin
    1 cup celery, sliced thin
    1 cup mushrooms, sliced thin
    2 cups vegetable broth
    2 cups water
    1 tbsp corn starch dissolved in water
    salt and pepper to taste

Directions

Marinate seitan or chicken in soy sauce and stir-fry in 1/2 tsp. oil, then remove from pan.
Stir-fry garlic in 1/2 tsp. oil
Add broth/water and then corn starch slurry
Stir well, then add vegetables in this order: carrots, cauliflower, celery, cabbage, mushrooms
Cover and cook for about three minutes (vegetables should still have a bit of crunch to them)
Add seitan and salt and pepper to taste
Red pepper flakes and chopped green onion to taste would also work well.
