Salsa Soup

Number of Servings: 1

Ingredients

    1 large jar salsa (your favourite)
    1 litre low-sodium chicken stock
    1/4 cup brown basmati rice (or other whole-grain rice)
    juice of 1 lime
    3 tablespoons chopped fresh cilantro

Directions

Empty chicken stock and salsa into crock pot, and add rice. Cook on low for 6-8 hours or until rice is fully cooked. When ready to serve, add lime juice and sprinkle a bit of cilantro over top.

Note: You can cook this on high for a shorter time, but it does not turn out as nice. It's also possible to make it on the stovetop as well. You just have to watch that it doesn't burn when the rice gets close to being done.
