Kay's Lemon Chicken Salad

Introduction

A delicious lite chicken salad great on a bed of lettuce enjoyed with friends. A delicious lite chicken salad great on a bed of lettuce enjoyed with friends.
Number of Servings: 4

Ingredients

    2 chicken breasts
    1 cup chopped celery
    1cup diced red pepper
    1 cup blueberries
    3 tbsp lite miracle whip or mayonaise
    1 container lowfat lemon yogurt

Directions

Cook chicken on grillor in lightly oiled pan.
Dice chicken into bite sized chunks.
Combine chicken peppers, celery, and blueberries.
Combine mayo and yogurt.
Add mayo and yogurt to chicken mixture.
Serve on a bed of lettuce.
