5 cups zucchini, diced 1/2 cup onion, diced 3 cloves garlic, minced 1 roma tomato, seeded and chopped 1 Tbsp Olive oil salt and pepper to taste
In a large saute pan cook onion in the olive oil on med-med/high heat until translucent. Add the garlic and cook 1 more minute, then add zucchini. Cook, stirring occasionally until zucchini is just tender, but not mushy. Add the tomato, salt and pepper and remove from heat.
