Cool Cucumber Soup

Number of Servings: 4

Ingredients

    3 cups plain nonfat yogurt
    1 English cucumber (about 1 pound), cut into chunks
    1 scallion, white and green parts, coarsely chopped (about 1/4 cup)
    3 tablespoons chopped fresh dill, plus sprigs for garnish
    Salt and freshly ground black pepper
    1 medium tomato (about 5 ounces), seeded and diced
    2 teaspoons olive oil

Directions

Makes 4 1-Cup Servings

In a blender, combine the yogurt, cucumber, scallion and dill. Pulse until pureed. Season, to taste, with salt and pepper. Ladle into individual bowls. Top each serving with 2 tablespoons of diced tomato, drizzle with 1/2 teaspoon of olive oil and garnish with a dill sprig. Enjoy with a piece of Whole Grain Bread.

    Fabulous soup. I made it in a food processor and ended up with 6 cups of soup. I served each 1 cup serving in a large martini glass. Beautiful. The recipe didn't say, but I did peel the cucumber. I did not de-seed it. Had never bought an English cucumber before. This recipe is a keeper. - 9/2/09

  • I had too many cucs from the garden, don't pickle and wanted to find something to do with them all. I enjoyed the soup but found it a bit bland. I added a chopped jalapeno and some tomato into the blender. Thanks You - 9/9/09

  • I loved this! The olive oil gives it a unexpected rich taste and eating it with a chunk of whole grain fresh baked bread really sets it off. Very nutrient rich and healthy. - 7/12/08
