Italian Sausage Dinner Soup

Introduction

Ingredients

    Onions, raw, 1 small chopped
    Garlic, 4 clove sliced
    Olive Oil, 1 tbsp
    Carrots, raw, 1 medium peeled and diced
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) chopped
    Turnips, 1 medium peeled and diced
    Spinach, fresh, .5 package (10 oz) (remove)
    Beef sausage links, (200 grams/ 1/4 pound) cooked and chopped
    Sweet Corn, 1 cup
    Butter Beans 1 can drained and rinsed
    Chicken stock 8 cup
    Basil, .1 tsp or to taste
    Parsley, dried, 2 tsp
    Pepper, black, 1 tsp or to taste
    Cayenne Pepper - dash


Directions

Saute onion until tender in olive oil in a large stockpot. Add diced carrot and garlic and saute 1 minute. Add spinach and saute until tender. Pour in chicken stock and add remaining ingredients. Bring to a boil and reduce heat to a simmer. Cook uncovered at least 45 minutes. (I cook mine up to four hours and add more chicken stock if needed.) Each serving is approximately 1 cup.
