Healthy Potato Omlet

Introduction

Number of Servings: 4

Ingredients

    4 large eggs
    3 cups raw diced potatoes
    1 cup onion chopped
    2 tbsp olive oil
    Salt to taste

Directions

Peel and chop potatoes. Heat oven to 450 degrees. Spray baking sheet with nonstick spray. Place potatoes on sheet and put in the oven. While potatoes are cooking, peel and chop onion. Once potatoes are tender, add oil to a large skillet and sautee onions until tender. Beat eggs. Add potatoes to pan, spread evenly. Add eggs and salt to pan. DO NOT MIX! Cover and reduce heat. Cook 5-10 mins unitl egs are firm. Turn Oven to broil. Put pan under broiler for 2 minutes or until golden brown. Cut into 4 servings and enjoy.
