Crabmeat Souffle

Ingredients

    1 tsp extra virgin olive oil
    1/4 cup fresh chopped onion, finely
    1 lb dungeoness crab meat, shells and cartilage discarded
    2 tbsp dijon mustard
    1 tsp worcestershire sauce
    1 egg whites, stiffly beaten (large)
    3 tbsp Cheese, parmesan, fresh, grated

Directions

Preheat oven to 350 degrees F.
Lightly spray a 9-inch square casserole dish or baking pan with olive oil spray.
In a small saucepan, heat extra virgin olive oil over medium-high heat. Cook the onion 2 to 3 minutes.
Transfer the onion to a large bowl. Stir in the crabmeat, mustard, and Worcestershire sauce. Slowly fold in the beaten egg whites. Pour the mixture into the casserole dish.
Sprinkle the mixture with the cheese.
Bake for 25 minutes, or until lightly browned. Remove from the oven and cut into rectangles. Serve immediately.
