Banana Muffins

Ingredients

    1 1/4 cup flour
    1 1/4 tsp baking powder
    1/4 tsp salt
    1/2 tsp baking soda
    2/3 cup white sugar
    1/3 cup shortening
    2 eggs
    2 Tbsp milk
    2 cups mashed bananas
    1/2 cup walnuts
    1 Tbsp cinnamon
    1/4 tsp nutmeg

Directions

Preheat oven to 350 and spray muffin tins or loaf pans with Pam or other cooking spray for easy removal.

In mixing bowl stir together flour, baking powder, salt and baking soda; set aside. In another bowl cream sugar and shortening with mixer until light, scraping sides of bowl often. Add eggs and milk, beating til smooth and fluffy.
Gently fold in chopped nuts and bananas as well as cinnamon and nutmeg. Add remaining dry ingredients and mix well.
Bake for 60-70 minutes or til wooden toothpick comes out clean. Cool on wire rack for 10-20 min.
Note--makes two loaves or 3-4 dozen muffins
