Salmon Stuffed Tomato

Introduction

It's a nice twist on traditional Tuna stuffed tomatos and if your like me, you have grown too many tomatos this summer! I don't evem like salmon,but I know it's good for me, so I eat it like this. It's a nice twist on traditional Tuna stuffed tomatos and if your like me, you have grown too many tomatos this summer! I don't evem like salmon,but I know it's good for me, so I eat it like this.

Ingredients


    1 pkg Chicken of the Sea Salmon in water
    1 Large tomato
    1/4 cup diced red bell pepper
    1/4 cup diced onion or shallot
    a few sprigs fresh Dill Weed (dried works too)
    1 tbs sourcream
    1tbs light mayo

Directions


Cut 1 large tomato in half & hollow out the centers
Mix 1 package of Salmon with chopped onion,red pepper and dill weed,add sourcream and light mayo. Mix well and stuff into hollowed out tomato....ENJOY!
