I love chickpeas, and I love Indian style foods, so I put together this simple recipe with things I had in my cupboards. Makes a great vegetarian lunch or dinner. I love chickpeas, and I love Indian style foods, so I put together this simple recipe with things I had in my cupboards. Makes a great vegetarian lunch or dinner.

Ingredients

    Chickpease (Garbanzo Beans)
    1 can diced tomatoes
    1/2 packet Sweet Leaf Stevia
    Curry Powder
    Tastefully Simple Mild Moroccan Seasoning Salt

Directions

Makes approximately 3 meal size servings or 6 side-dish sized servings.

Using food processor (I love my Magic Bullet!), process the tomatoes until smooth. add chickpeas, processed tomatoes and all seasonings together in a small saucepan and heat until boiling, uncovered. Turn down heat after boiling point and cook a bit longer until the tomato sauce thickens some. Serve over brown rice or whole wheat couscous.
