Carrot-applesauce Muffins

Ingredients

    1 cup applesauce
    1/2 cup grated carrot
    1/3 cup oil
    2 eggs
    1/2 cup 1% milk
    1/2 cup sugar
    1 tsp vanilla
    1 1/2 cups whole wheat flour
    1/2 cup cornmeal
    2 Tbs wheat germ
    3 Tbs flax seed meal
    2 tsp baking powder
    1 tsp cinnamon
    1 tsp ginger
    1/2 tsp allspice

Directions

Preheat oven to 350. Grease or spray muffin tin or line with paper muffin cups. Mix applesauce, carrot, eggs, oil, milk, sugar, and vanilla. In a separate bowl, mix all other ingredients. Combine wet and dry ingredients and mix just until blended. Spoon into muffin tins. Bake for 25 minutes.
