Mom's Lasagna

Introduction

This is the recipe my mom gave me. Low in calories, yet fully of cheesy goodness -- leftovers are scarce when this hits the table! This is the recipe my mom gave me. Low in calories, yet fully of cheesy goodness -- leftovers are scarce when this hits the table!
Number of Servings: 12

Ingredients

    1 cup chopped onion
    1 clove garlic, minced
    23 ounces chunky tomato sauce
    2 tbsp olive oil
    15 ounces fat free ricotta
    1/2 cup shredded parmesan
    3.5 ounces shredded mozzarella
    Barilla No Boil Lasagne noodles, 6 pieces

Directions

Heat olive oil, then add onions and garlic. Saute until onions are translucent. Add tomato sauce. Reduce heat to low. Simmer for 1-1/2 hours.

Lightly coat a 9x12 baking dish with cooking spray. Place two noodles on the pan bottom then cover with 1/3 of the tomato sauce. Sprinkle with 1/3 of mozzarella and ricotta. Top with 1/3 of parmesan. Repeat layers two more times.

Cover dish and bake at 350 for 30 minutes. Cut into 12 servings.
