Chicken, Rice & Bean Skillet

Ingredients

    500g Chicken Breast, no skin, cut into strips
    1 medium onion, chopped
    2 cloves garlic, minced
    300g Broccoli florets
    300g sliced mushrooms
    2 large carrots, chopped
    250g green beans, halved
    I jar (454g) La Victoria Salsa Suprema, Mild
    1 cup Chicken Broth, 99% Fat Free
    300g Pinto Beans, canned
    3/4 Cup Instant Rice

Directions

Spray chicken with cooking spray. Add onion, garlic and chicken. Cook until chiken is browned. Add Vegetables with a little stock to prevent sticking. Cook for about 5minutes until vegetables are just tender. Add Salsa and stock and simmier for about 15 minutes. Add pinto beans and rice and cover. Cook for another 5minutes or until rice is tender.
