Turkey, Vegetables & Rice Casserole

Introduction

A filling one pan meal. A filling one pan meal.
Number of Servings: 8

Ingredients

    1 lb Ground turkey, 93% lean
    1/2 cup Onions, raw, chopped
    1/2 cup Peppers, sweet, red, raw, chopped
    3 cloves Garlic
    1 package (10 oz) Mixed Vegetables, frozen
    1 cup Brown Rice, medium grain
    1 can Healthy Request Cream of Mushroom Soup
    2 1/2 cups water

Directions

In a large pan cook turkey, peppers, onions, and garlic. Stir in vegetables, water and soup. Bring to a boil and add rice. Reduce heat & simmer for 45 minutes. Remove from heat & allow to sit for 10 minutes. Sauce will thicken. Salt & pepper to taste. Leftovers freeze well.

Makes 6 - 1 cup servings

    I LOVE IT! And my husband did too. I used couscous instead of rice and cut the simmering time down to 20 minutes. Added some extra random spices :) It is VERY VERY VERY filling and makes a lot! - 4/29/09

    This recipe was easy to make and very filling- I divided it into the 6 1cup servings, and would recommend making it into 8 instead. It is a little bland, so next time I will add more garlic, onions, peppers, and some other spices. - 7/21/08
