low fat broccoli salad

Ingredients

    6 cups of chopped broccoli
    3 tbsp of red onion, chopped
    1 cup of red grapes, sliced in half
    4 tbsp of reduced fat bacon bits

    4 tbsp of Kraft light mayo with olive oil
    2 tbsp of apple cider vinegar
    5 packets of sugar substitute
    2 tbsp of reduced fat sour cream

Directions

mix broccoli, grapes, onion and bacon bits in large bowl...set aside in fridge.
Mix remaining ingredients in little bowl, refrigerate for at least 1 hr, then pour over the broccoli mixture.
Makes 6 - 1 cup servings

  • I love broccoli salad and make a variation of this recipe. My dressing is 1 c low-fat mayo, 2 tbsp white vinegar & 2 tbsp stevia (start w/less add to your taste preference). I also add 1/4 c. sunflower seeds. Add dressing to the rest of the ingredients - mix & refrigerate! - 2/7/10
