Mini Thin Pizza Dough Crusts

Introduction

Ever craving "real" pizza but afraid to trust yourself by ordering or making a whole pizza? Try these mini thin crust pizzas - delicious! And better yet, YOU control the calories! Recipe includes calorie amounts for crust & sauce only, the toppings will need to be calculated separately. Ever craving "real" pizza but afraid to trust yourself by ordering or making a whole pizza? Number of Servings: 16

Ingredients

    3 cups all purpose flour
    1 Tbsp Quick Rise Yeast
    1 tsp salt
    1/2 tsp sugar
    1/4 cup Whey Protein
    1/4 cup Wheat Germ
    1/4 cup Wheat Bran
    1 Tbsp Olive Oil
    8 oz lukewarm water
    Flour for rolling dough

    Sauce:
    1 can (10 3/4 ounces) tomato puree
    1/4 tsp oregano
    1/4 tsp basil
    1/8 tsp garlic powder
    1/8 tsp onion powder
    2 tsp grated Parmesan Cheese
    1/2 tsp salt
    1/4 tsp black pepper

    Topping Ideas:
    Low-fat skim mozzarella cheese
    Turkey pepperoni
    5% hamburger
    Olives, green peppers, red peppers, onions, mushrooms, or green onions.
    *Remember, these are topping ideas and not included in calorie count.

Directions

Stir together flour, yeast, salt, sugar, whey protein, wheat germ & wheat bran in a mixing bowl. Add olive oil & water. Mix all ingredients together.

Knead dough for 3 minutes. Shape into a ball & put in bowl. Cover & let rise until double in volume.

When dough has risen, punch down & divide into 4 equal pieces and shape into round balls. Let dough rest for 4 minutes.

Divide into 16 balls and roll each into a 6 inch circle. Spray a pan with non-stick spray. Place dough on pan & let raise for 10-15 minutes. For best results use a pizza pan. Spread with sauce, desired toppings & desired cheese. (Remember - toppings & cheese are not included in the calorie count, only crust & sauce) Bake at 425 degrees for about 20 minutes. Check at 10 minutes, depending on the oven the pizza might be done around 10 minutes. The crusts are very thin & will cook quickly.

To enjoy later:
Cut 16 circles out of parchment paper and place crusts on circles. Layer the circles without crust touching crust and place in a freezer bag. Freeze crusts. To cook, take out desired amount of crusts, let thaw on the counter for 30-45 minutes. Bake at 425 degrees for desired time.
