Directions

Souvlaki:
In a large bowl, coat the chicken with the Greek seasoning, rubbing it into the pieces very well. Then add the rest of the ingredients, toss to coat well. Cover and set in fridge to marinate at least 1 hour, but longer is better.
Place on skewers and grill over low heat until the juices run clear.

You can serve the souvlaki with pita, red onion slices, lettuce, tomatoes and tzatziki sauce if you like.

Note: Prep time includes the marinating time of one hour for the chicken.

Greek Seasoning is a store bought blend that combines common spices used in Greek cooking. Look for it where spices are sold.

This was something I would make once a week. It was very good. I let it marinate all day and then threw it in the oven before I left for my workout and it was ready when I got home. - 7/24/08

  • Yummy. I grilled vegetables to go with this and skipped rice since it was served with pita. Make some extra marinade to brush over veges or if in a time crunch, use Greek salad dressing. - 9/6/10

  • A version of the sauce I used is 2% organic homemade yogurt (Greek Yogurt is fine too, of course), lots of dill and finely diced or grated cucumber. We also add a little minced garlic. - 9/4/10

  • I serve this with some white rice that I cook with chicken stock, you can even make it by placing the rice, stock and marinated chicken in a pan in the oven and cook them together, the rice will absorb the spices on the chicken, YUMMY! - 11/3/09

  • I love, love, love Greek food, so glad to see this recipe, I will make it - but I prefer chicken breasts. When I make it, I'll rate it - but it sounds good :) - 7/15/08

I'm sure it would work well with Chicken breasts, and even pork too! I prefer the tenderness and moisture from Chicken thighs when grilling, but it's a personal choice.
