Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly.
Sprinkle spinach with salt and pepper and onion powder; add the chicken broth. Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato and sliced green onion. Cover the baking dish with foil and bake at 350° for 20 to 25 minutes, or until fish flakes easily with a fork. Serves 4.
I made this tonight, and we all loved it! Aside from being delicious and low calorie, it makes a beautiful presentation, suitable for special occasions. It will surely become a regular around here!
I made this two nights ago and it turned out awesome! I only had about half of the required amount of spinach and it still turned out great! I have two kids, 4 & 10. My 10 year old is so picky about everything. Both ate it up and asked for more! We will share and make again! Thank you!
Simply delicious and easy to make. So good in fact, my kids loved it, and they hate fish. I didn't have the creole seasoning so used red cayenne and it turned out well. Thanks for making fish night successful in our house.

Wow! That was great. I used mahi and added red peppers and a little parmasian cheese. I didn't measure the broth, and put way too much in. However the "soup" was tastey. I had some left over rice, so I mixed that in too.
