Easy Turkey Vegetable ChiliSubmitted by: LIBERTYGIRLFLA
1 lb ground turkey, chicken breast, buffalo or other lean meat
16 oz jar of salsa (hot, med or mild to taste)
16 oz bag of frozen mixed vegetables
1 cup UNCOOKED brown rice
2-4 tbsp chili powder (to taste)
3 cups water
Salt and pepper to taste
16 oz can of black beans (or chili beans of choice)
6 oz can tomato paste
Add remaining ingredients. Stir well.
Bring to a boil, stir once. Cover with lid or foil; reduce heat and simmer 45 minutes.
Remove from heat and let stand (covered) 5-10 minutes. Most or all of the water should be absorbed. Rice should be fully cooked.
Freezes well. Makes approx 8 1-cup servings.
