Introduction

I love this ... it is my favorite way to use up all the summer squash in my garden. I love this ... it is my favorite way to use up all the summer squash in my garden.
Number of Servings: 4

Ingredients

    1 small summer squash
    1 medium zucchini
    1 medium ripe tomato
    1 small onion
    8 oz. fresh mushrooms
    3 cloves garlic
    1 Tbsp. Olive Oil
    1 tsp. Salt

Directions

Dice all veggies. Heat Olive oil in non-stick frying pan. Add all veggies, then sprinkle with salt. (I often sprinkle with basil as well), Cover and let cook until soft. Remove lid and cook until all vegetable juices have evaporated and veggies get slightly browned. Serve warm.
