Norma's Bean Soup

Introduction

Number of Servings: 5

Ingredients

    Olive oil—to brown
    2 potatoes (peeled & cut bite size)
    2 or 3 carrots
    1 onion
    2 stalks of celery
    Small cabbage
    1 can Great Northern Beans
    1 can Pinto Beans
    4 chicken bouillon cubes per quart of water or canned chicken broth & water.
    1 tbs. Parsley
    ½ tbs. sweet basil
    salt & pepper to taste
    2 cloves of garlic ( pressed)

Directions

sauté onion, celery, carrots, and potato. Add cabbage & cook down for a few minutes.
Cover with water & bouillon cubes or chicken broth.
Puree ½ of the beans and add beans to pan.
Add seasonings and pressed garlic.
Simmer for about ½ hour.
Taste to see if more seasoning is necessary.
10 minutes before serving add pasta (Ditalini or elbow macaroni.)
