An easy Gumbo
That is really easy to make vagan, (just be sure to use Veggie Broth),
You can make it ahead of time in a slow cooker.
** Also please note cooking okra in a iron pot will make it change a darker colour.

That is really easy to make vagan, (just be sure to use Veggie Broth),

Number of Servings: 13

Ingredients

    796 ml can of stewed tomatoes
    398 ml can cut okra
    540 ml can black beans
    341 ml can of crisp corn (or 1.5 cup frozen)
    a 900 ml box of chicken Broth (or veggie broth for vagans)
    1 cup rice (you can also try wild rice)
    pepper, salt, garlic, cyanne pepper to taste

Directions

rinse okra, beans and corn under warm water in a collender till it runs clear.
put okra, beans, rice, corn and stewed tomatoes, in a pot (or slow cooker).
top up with your choice of broth,

cook until rice is tender, and soup is hot.

makes roughly 12-13 cups
