Vegetable stuffed peppers

Ingredients

    2 cans of diced potatoes
    2 cans of diced tomatoes
    1 cup of cooked rice
    1 cup of shredded carrots
    4 peppers (boiled)

    cut the four peppers in half, mix together the remaining ingredients, fill the pepper halves with mixture and bake

Directions

Bake 350 for about 45 minutes or until tender
