Corny Buckwheat Pancakes

Introduction

Serve as breakfast or use as a side dish with a meal. Serve as breakfast or use as a side dish with a meal.
Number of Servings: 2

Ingredients

    Corn, cut from one ear of corn (can be cooked or raw)
    2/3 cup of Hodgson Mills Buckwheat Pancake Mix
    1 large fresh egg
    1 cup non-fat milk
    1 TB olive oil

Directions

Mix all ingredients together in mixing bowl (adding a bit of water if the batter appears too thick). Ladle onto preheated non-stick skillet or griddle (spray with non-stick cooking spray if desired). Cook over medium heat until bubble appear and begin to burst. Flip over and brown other side. Cooking time is usually 2 - 3 minutes perside.

Makes 3 servings of 3 pancakes each. If you spread with butter (delicious) be sure to add in the additional calories.
