Pecan Apple Grape Chicken Salad Light

Introduction

I took the ingredients from one of my favorite sandwiches at Arby's and made it light. You could add more mayo to the mix, but I choose to use just enough to preserve the ingredients. I took the ingredients from one of my favorite sandwiches at Arby's and made it light. You could add more mayo to the mix, but I choose to use just enough to preserve the ingredients.
Number of Servings: 4

Ingredients

    Three 3 oz. grilled chicken breasts (cooked on my George Foreman)
    1/2 Granny Smith or green apple
    Handful of red or black grapes
    Handful of chopped pecans
    Light mayo

Directions

Chop all ingredients into bite size pieces. Add 2 tbsp. of light mayo and mix. Mayonaise should lightly coat ingredients, not completely cover them like traditional chicken salads.

Serve on a whole wheat bun or low carb tortilla. Lettuce and tomato can also be added.

This version has about 1/2 the fat and calories as the Arby's version, and it really helps with my cravings!
