Ingredients

3 Tbsp shallots, chopped
3 garlic cloves, chopped
2 Tbsp olive oil
1 tsp dried thyme
1 lb chard
1, 3/4 cup veggie broth
1 cup lentilles du puy, rinsed
2 Tbsp parsley, chopped
1 Tbsp lemon juice
Directions
Clean chard then remove stems. Chop stems and roughly chop leaves.
Saute shallots, garlic and stems in olive oil with a pinch of salt for 5 minutes. Add broth, lentils, thyme and bring to a boil. Reduce to simmer for 30-40 minutes until lentils are tender but not mushy. Add chard leaves and cook for about 5 minutes until chard is wilted. Stir in parsley and lemon juice, and salt and pepper to taste.
To serve as a cold salad, chill before adding lemon juice and parsley.
Serves 4 or 6.
