Southwestern Chicken

Introduction

I ordered this in a restaurant and it came served in a tortilla bowl which I managed to not eat! We came home and did a pretty good job of duplicating the meal... without the bowl, of course. Forgive me if its not really southwestern. I only named it that because that's what it was called when I ordered it ;)

500+ calories seems high to me but its a whole meal and very filling and very satisfying. It'd be easy enough to split it into smaller portions.

Enjoy.

*Sodium is high because I used prepared salsa and prepared taco seasoning from the drop down choices for the purpose of calculating calories, etc. We actually made our own.

Number of Servings: 4

Ingredients

    Chicken Breast, 1.5 pounds
    Peppers (all colors), 1 cup diced large
    Onions, raw, 1/2 onion, diced large
    Beans, black, 14 ounce can, drained and rinsed
    Yellow Sweet Corn, Canned, 1/2 a can, drained
    Salsa, 1 cup
    Old El Paso Taco Seasoning, 2 tsp
    Fresh Express Fancy field greens salad, 3 cup
    4 ounces shredded pepper jack cheese
    Olive Oil, 2 tbsp (for cooking)

Directions

Season chicken breast with taco seasoning and grill until "just done". While the chicken is cooking, saute onion and peppers until crisp done. Mix together black beans and corn and microwave until hot. Dice chicken into bite-size pieces. Layer a dinner plate with mixed greens, then chicken, peppers & onions, beans & corn, cheese. Top with salsa.
