Zingy Lemon Cookies

Introduction

These cookies have a real lemony zing to them! Makes a lot of cookies, but they won't last long. Kids love 'em! If you want less of the lemony taste just eliminate the powdered lemonade mix. Ingredients

    1 Box Lemon Cake Mix
    1/2 cup Egg Substitute
    1/3 Cup Vegetable Oil
    2 Tbsp Fresh Lemon Juice
    Grated Peel of One Lemon
    1 Tbsp Powdered Lemonade Mix (optional)

Directions

Preheat oven to 375 degrees. Pour cake mix into a large bowl, add lemon peel & lemonade mix. Mix well. Stir in egg substitute, vegetable oil and lemon juice. Mix well. {Optional step: covering and refrigerating the dough for 12 to 24 hours seems to give the cookies an extra lemony kick!} Drop dough by spoonfuls into a large bowl of powdered sugar and roll until well covered. Place on ungreased cookie sheet. For chewy cookies bake for 9 to 10 minutes. For crisper cookies bake for about 12 minutes, or until edges are browned.
