IntroductionReplace the yolk in traditional deviled eggs with heart-healthy hummus for a great treat/snack! So yummy! Replace the yolk in traditional deviled eggs with heart-healthy hummus for a great treat/snack! So yummy!
1 Hard boiled egg (as many as you will be making), cooked, cooled and yolk discarded. (and I DO mean discarded! Don't be snacking on that fatty yellow hunk!)
1 Tbsp Hummus (any flavor, calorie count will change, check your container)
Garnish (optional) paprika or parsley is good. Also tiny diced roasted red peppers, onions or a little minced garlic is good.
Peel shell from eggs. Slice the egg in half length-wise. Remove yolk and discard. Fill each hollow left by yolk with a dollop of hummus. I use about 1 tbsp on two halves.
Garnish eggs with a sprinkle of paprika or a little parsley (fresh snipped or dried, whatever you have on hand). Try garnishing with diced roasted red peppers or minced garlic for a richer taste! Be creative but keep it low cal, like tomatoes or onions, maybe capers.
Arrange on plate.
Warning: These can be addictive, especially if you use the Sabra brand smooth hummus!
